Ossiano is a journey into the deep — a multi-course tasting menu served against the living backdrop of the Ambassador Lagoon, where 65,000 marine creatures drift past your table as the ocean writes tonight's script.

Named for the sound of water itself — O-sha-no — our dining room rests at the base of Crescent Road, Palm Jumeirah, its great window opening onto the Ambassador Lagoon. Here, dinner is not served in front of a view. It is served inside one.
The kitchen works in quiet counterpoint to the current: a single multi-course tasting journey, rewritten with the seasons and the tide of what the world's coasts offer that week. Sharks patrol at a respectful distance; shoals turn like weather; and every course arrives to its own small theatre of light and water. Phones down. Voices low. The ocean has the room.

Arrival at Crescent Road
You arrive at the Palm's crescent as the tower lights come on. A short descent — a staircase that reads like a tide chart — carries you from the lobby into the blue.
Seatings from 6:30 PMThe window reveals itself
Seated against the glass, champagne in hand, you watch the lagoon notice you — grouse of jacks turning, a ray gliding past like a rumour. The journey's first courses echo the surface: bright, saline, alive.
Courses 1–4Where the kitchen dives
The heart of the journey: caviar and king crab, lobster drawn from those very waters' cousins, broths the colour of dusk. The room grows quieter without anyone asking it to.
Courses 5–9Sweet, then the long look back
Pearl-white desserts, coffee, and one last slow turn of the tank. You resurface changed — carrying, as our guests say, a little of the ocean's pace with you.
